Sometimes I feel like greens when it’s gray outside and the snow is high. I feel though that many winter salads are topped with heavy things such as grains and candied nuts. Sometimes I want to keep it a little lighter and I go for this simple Mâche salad. Mâche, also known as Lamb’s lettuce, is definitely a winter green – while you can get it all year around these days, it is typically available during the winter months.
This time I combined it with sliced mushrooms, slivers or red onion, bits of bacon and a soft boiled egg*. Served with a simple olive oil and balsamic vinaigrette it offers nice texture, a bit of acidity and crunch. It’s the perfect side salad to share – or serve it as a filling lunch salad.
* Excuse the look of the egg – it was acting up while peeling and decided to break into large pieces, not allowing me to cut it nicely.
