We’ve received cheese, maple syrup, jam and this past week some raw honey. I love honey – simply drizzled on buttered toast or over plain Greek yogurt. It’s like this sweet golden magic sticky substance. So that’s what I did here, I drizzled it over yogurt – except that I added some chopped pecans and some crumbled gingersnap cookies. Is it dessert, or breakfast? You decide.

Feel free to add any kind of nuts you like and whatever cookie leftovers you might have lying around. No recipe needed. For a healthier options, swap in some fresh berries or cherries instead of the cookies. Enjoy.Yogurt and Honey Giulia Doyle

I had a bunch of nectarines lying around the fruit bowl that were juicy and sweet, but just a little past their prime. I didn’t want to waste them and didn’t feel like baking, so I pulled out my blender and whipped this up with the kids.

Adding the cardamom gives the pops a little bit of depth and adding a little bit of plain Greek yogurt, makes them creamy and eliminates the frosty texture fruit pops can often have. You can make this with any fruit you have on hand.

Nectarine Cardamon Yogurt Pops

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 12 hours

Yield: About 6 pops - depending on your mold.

Ingredients

  • 3-4 very ripe nectarines, cut in slices or chunks, skin on
  • 1/2 cup of sugar
  • 2 cardamom pods
  • 1/2 cup of full fat plain Greek yogurt

Instructions

  1. Add fruit to blender and blend until smooth and skins are just tiny flecks. Set aside.
  2. Add 1/3 cup of pureed fruit to small sauce pan, add sugar and cardamom pods and heat at medium high heat until sugar is completely melted. Carefully taste fruit mixture and keep on a low simmer until you detect the smoky cardamon flavour.
  3. Remove cardamom pods and add sugar/fruit mixture to blender with the other fruit. Add yogurt and mix until well combined and smooth.
  4. Add to popsicle molds or cups and freeze according to instructions, or 12 hours or so if using cups. If using cups, only add popsicle sticks after a couple of hours so they stay upright.

Notes

My popsicle mold was acting up, so I used kids plastic cups to make my popsicles. I froze them for a couple of hours and then added the popsicle sticks into the half frozen fruit so they stay upright. To release the pops, I ran the cups under hot water for a few seconds.

Mango, Raspberry and Orange Smoothie /2015/04/15/mango-raspberry-and-orange-smoothie/ Wed, 15 Apr 2015 12:12:08 +0000 http://www.audrey74.com/?p=3639 Mango Smoothie Giulia DoyleThe sun came out this weekend and the temperature rose to non-jacket weather. Windows are open at our house, we moved our patio furniture into the yard, took our bikes out for a ride and celebrated with this sunshine in a glass.

Smoothies are so fast and easy and you don’t really need a recipe. Just grab some fruit – frozen or fresh – add them to a blender with some yogurt, juice or coconut water and blend. Add veggies if you want, especially if you want to sneak in some extra goodness. This one was just made as a morning treat – no need to sneak it vegetables, protein or fiber.

Mango, Raspberry and Orange Smoothie

Prep Time: 5 minutes

Yield: 2 - 3

Ingredients

  • 1 banana
  • 1/2 cup fresh or frozen mango
  • 1/2 cup fresh raspberries
  • 1 orange, peeled
  • 1/2 cup of coconut water
  • 1/4 cup of plain greek yogurt
  • 2 ice cubes if using fresh mango

Instructions

  1. Blend all ingredients until smooth. Add extra coconut water or water if you want consistency a bit more liquid.
