I decided to make this simple roasted tomato sauce. The sauce is wonderful and works perfectly on pasta. However, I also had a craving for eggs baked in tomato sauce and this recipe came together really easily. A few great ingredients and we had a perfect weekend breakfast – just a little ‘diavolo’ heat for me, and a lot of ‘diavolo’ heat for my husband.

Eggs Diavolo

Ingredients

  • 3 cups of good quality tomato sauce
  • 2 teaspoons of chili
  • 2 teaspoons of cayenne pepper
  • 1 teaspoon of paprika
  • 4 eggs
  • Parmesan
  • 2 cups of baby spinach or arugula
  • Red pepper flakes (optional)
  • Hot sauce (optional)

Instructions

  1. Add tomato sauce to small/medium frying pan. Heat on medium heat. Season to 'diavolo' level you like with chili, cayenne and paprika.
  2. Once sauce is gently bubbling, crack all four eggs into the sauce. Cover with lid and let cook about 3-5 minutes, depending on how well done you want your eggs. Remove lid and serve immediately with shavings of parmesan, greens and added spice (red pepper flakes and hot sauce).
  3. Serve with bread to soak up all the saucy goodness.

Breakfast burritos are a fast and easy meal that are fun and ensure that we all get a good dose of protein in the morning. Add the flexibility of using up some of my leftovers and skipping on the not-so-good for you drive-through version and my family and I are happy campers. I made these for Style Me Pretty Living a couple of weeks back – Much better than the golden arch version! Enjoy!

Breakfast Burrito for Style Me Pretty Living

Prep Time: 4 minutes

Cook Time: 6 minutes

Total Time: 10 minutes

Ingredients

  • 2 medium tortilla wraps
  • 1/4 cup of chorizo sausage, sliced thin
  • 1/4 cup of orange or red peppers, chopped very small
  • 3 large eggs
  • 2 tablespoons of Smokey Chipotle Salsa or your favorite type
  • 1/2 - 1 cup grated Monterrey Jack cheese
  • Salt and pepper
  • Cayenne and/or Smoked Chilli Powder

Instructions

  1. Heat a medium sized pan on medium/high.
  2. Add the sausage and chopped peppers to the hot pan and brown slightly.
  3. Add your eggs and whisk rapidly, combining egg, sausage and peppers. Turn heat to medium and cook until eggs set but aren't dry. Turn down heat if needed.
  4. Add salsa and stir to combine. Season with salt, pepper and cayenne/chilli to taste. Turn off heat, add cheese and combine.
  5. Take out another pan and heat at medium/high, or move egg mixture to a plate and wipe pan with a paper towel. Add a tortilla to the hot dry pan, add half the egg mixture. Fold tortilla into a little package with seam facing down. The heat will stabilize your burrito.
  6. Repeat with second tortilla. Flip once tortilla is slightly golden and toast other side.
  7. These taste great warm or at room temperature. Serve with salsa or sour cream. If you have black beans or other favorites, such as corn, sliced jalapenos or tomatillos - feel free to add them as well.

I decided to make deviled eggs for Style Me Pretty Living, but I wanted to take it beyond the typical mayo filling. I’m sharing two different options with you today – but feel free to change it up. Maybe you like cilantro, or add tomato paste and a dash of paprika, some black olives or even a little caviar – be creative! Easter may be behind us, but these little beauties are perfect for any get-together or backyard party (yes – those are just around the corner!)

Curried Deviled Eggs

Ingredients

  • 1 teaspoon of red Thai curry paste
  • 1-2 teaspoons of fresh ginger
  • 1 tablespoon of plain yogurt
  • 1 teaspoon of finely chopped cilantro (optional)

Instructions

  1. Peel your hard boiled eggs and cut them in half with a sharp knife.
  2. Carefully scoop out the yolks and add them to a bowl. Add the curry paste, ginger, yogurt and cilantro and combine well until smooth. Make sure that the consistency is the thickness of frosting - add a little more yogurt if needed. Fill mixture into a piping bag fitted with a very large tip. Carefully fill each egg half.

Mediterranean Deviled Eggs

Ingredients

  • 1 teaspoon of finely chopped capers
  • 4-5 cherry tomatoes
  • 1/4 teaspoon of roasted garlic powder
  • salt and pepper

Instructions

  1. Peel your hard boiled eggs and cut them in half with a sharp knife.
  2. Carefully scoop out the yolks and add them to a bowl.
  3. In a small food processor or blender, combine egg yolks, chopped capers, cherry tomatoes, garlic powder and blend until smooth. Season with salt and pepper.
  4. Carefully fill each egg half with a spoon.

Notes

The ingredients noted should make enough filling for 2 eggs (4 halves). Feel free to adjust to your liking and increase amounts for more eggs. Note that the Mediterranean filling is a bit more liquid because of the cherry tomatoes, so it wouldn't pipe very well.

Fast and easy, but just a bit of added fun because of the heart shaped cut-out. You don’t need much of a recipe for this – just don’t miss the broiler step so your egg sets and you don’t burn your bread.

Valentine Egg in a hole

Prep Time: 3 minutes

Cook Time: 5 minutes

Yield: 1 serving

Ingredients

  • 1 slice of bread (texas or brioche works particularly well)
  • 1 tablespoon unsalted butter
  • 1 large egg
  • salt, pepper and chipotle chili

Instructions

  1. Set the broiler to low. Punch out a heart shaped hole from the centre of your bread slice with a cookie cutter. Butter both sides of the bread slice and cutout, including the inside of the hole.
  2. Toast the slice and cutout of bread in a large nonstick skillet over medium-low heat until golden. Flip the bread and crack the egg into the hole, while keeping all egg white in the hole.
  3. Cover and cook until egg sets - 1 1/2 to 2 minutes. Place the skillet under broiler just until the white is fully cooked. Season with salt, pepper and chili and serve immediately.

Sometimes I wonder why I don’t make eggs more often during the week. They are fast and keep you going. But weekday mornings are just crazy – between the kids not wanting to eat breakfast or get dressed, lunches and book bags to pack – I’m lucky if we get out the door on time with something in our bellies. The eggs would just be ignored and that would be sad. So I save them for the weekend, when we’re not in a hurry and can enjoy a breakfast when our bellies are ready for it. Most weekends that would be an hour later than during the week.

This time we added some smoked salmon. It gives the meal a beautiful colour and satisfying salty flavour – adding my usual cream cheese to the bread makes these eggs perfect for breakfast, brunch or a light lunch.Audrey's Egg and Smoked SalmonAudrey's Eggs and Smoked Salmon

Eggs and Smoked Salmon on Toast

Ingredients

  • Fresh whole wheat crusty bread
  • Eggs
  • Milk
  • Smoked Salmon
  • Cream Cheese
  • Chives or Dill
  • Salt and Pepper

Instructions

  1. Cut your fresh bread into slices. If the bread is a day or so old, toast the slices.
  2. Scramble your eggs in a hot pan and finish off with a splash of milk.
  3. Fold small pieces of smoked salmon into the hot eggs.
  4. Salt and pepper to taste.
  5. Spread a small amount of cream cheese on each piece of bread, top with egg/salmon mixture and garnish with chives or dill.
  6. Serve warm.
