This is also my last  blog post.

I’ve been blogging for nearly six years, if you count my first blog, and have LOVED it! Blogging allowed me to do so many fun things and learn so much. It allowed me to share glimpses of our life, it challenged me to develop my photography skills, it served as a portfolio to do freelance photography and writing for print magazines and online publications and it gave me the opportunity to partner with some incredible brands. It served as an incredible creative outlet, particularly when my kids were little and because of this blog I have new friends that I never would have met otherwise.

But all things do come to an end and for this blog the end is here and now. I’m no longer drawn to it and just want to do some other things. I will still be on Instagram, and I’d love it if you followed along there.

Thank you all so much for following my blog for however long it’s been! I’ve enjoyed getting to know you and I’m sure I’ll be staying in touch with quite a few of you!

This blog turns two this week and I’ve been blogging for almost 5 years. Five years ago I knew nothing about blogging,  I only followed a handful of bloggers and wrote a corporate blog at work. I jumped in and tried a bunch of stuff, attended some conferences and took classes – each time being more inspired and learning so many things on the way. Two years ago, when I decided to switch to this blog, I knew a little more and focused on what I enjoyed most – but again, the blog world is always changing and what worked a year ago, is not really what works today. But it’s fun, it’s challenging and definitely not boring.

Here I am with a little post and a few links to some favourite recipes on this blog.

It was a good year, a fun year. A year filled with adventures, firsts and  a few challenges. Again, thank you so much for stopping by my little space, taking time out of your busy day and making it a wonderful place for me to share pieces of my life – be it the sweet or the savoury.

Wow – already 1 year since I decided to blog in this space exclusively! At the time I wanted to focus on my food photography, to share recipes and goodies with you guys twice a week. I learned a new blogging platform and am now able to showcase my images larger and in a much more professional manner. I’m really happy how things are working out here – I get to share some of the food we made and other things I’m creating for Style Me Pretty Living, Clementine Daily and Classic Play.

In addition, I got to share our travel photos, such as Disney, or Cape Cod and Montreal. I’m creating an online album for myself and my family and I’m happy that all of you have joined the ride. It’s a lot of fun and I hope to continue to share with you here at Audrey’s.

I can’t think of my life without him – he’s my best friend, my avid supporter. He encourages me to strive for things I’m too chicken to attempt, he talks me off the ledge when the kids drive me crazy, he tells me to be patient when I want to throw in the towel, he loves me when I’m grumpy and mean and he is the most loving and fun dad that any family could wish for. Happy Anniversary my love!Vichysoisse-Audrey'sI made Vichyssoise because that’s what we had at our wedding reception. It was a hot and very humid day and I was so glad we had opted for a chilled soup. I love the smooth texture, the flavour of the leek and the hint of nutmeg that shines through. My daughter’s been asking for soup and this was the perfect summer version of a thick creamy and comforting meal.

Vichyssoise

Yield: 6-8 servings

Ingredients

  • 3 leeks (white parts only), washed and cut crosswise. Look for fat ones.
  • 2 tablespoons (1/2 stick) unsalted butter
  • 3 large white potatoes, peeled and sliced thin
  • Coarse salt, to taste
  • 3 cups vegetable or chicken broth
  • 1 cup of half and half cream
  • Pinch nutmeg
  • Black or white pepper to taste (black will leave flecks)
  • 1/2 cup heavy cream
  • Fresh chives

Instructions

  1. Saute the leeks in the butter for 10 minutes until soft, but not browned. Add the potatoes, salt, and stock, and simmer until potatoes are tender, about 30 minutes. Puree the soup in batches in blender or with an immersion blender.
  2. Pass soup through a fine strainer. Add the half-and-half, nutmeg, and pepper. Adjust seasoning to taste. Adjust liquid if soup is too thick. Chill well.
  3. Stir in cream to serve, and top with fresh chives, whole or chopped

Notes

Passing soup through a strainer is optional. It gives you just a bit more smoothness. When using the blender, do NOT fill it to the top and watch for the escaping steam. You can really burn yourself if you don't watch out. There are many recipes out there for Vichyssoise - this one is adapted from different ones found online and adapted to my taste.
